His overall
dream is to become a chef, and he is always tempted to cook wherever he finds
what he needs. When he finds Linguini, and realizes he can control his actions
with his hair, he immediately cooks food of extremely high-standard, hiding
under Linguini's togue, and everyone buys his dishes by asking for the 'Special
Order'.

· Linguini's name is based on some Italian dishes. For example, Alfredo is a type of cream sauce used in pasta dishes, while Linguini is a type of pasta.
· Linguini wears Incredibles underwear.
· Linguini is a modified Ernie.

Colette Tatou: the only female cook in Chef
Skinner's kitchen. She is a capable cook, hard working and very
tough to enter the masculine world of haute cuisine. She had defended Linguini
from being fired as a garbage boy when Skinner caught him 'cooking' the soup in
which Remy had made. She takes Linguini under her
wing and teaches him the skills necessary to survive in the fast-paced kitchen.
She was at first unaware of Luigini's admiration for her. Colette felt disgruntled
when Skinner took a personal interest into Luigini, which in fact Skinner was
trying to force the truth of Linguini's cooking.
Anton Ego: is an imperious and acerbic food critic, whose reviews can make or break a restaurant. He adamantly rejects Gusteau's belief that anyone can cook, and was a firm critic of the idealist chef. We're sure his nickname "the Grim Eater" and the fact that Gusteau died mysteriously after Ego downgraded him from five stars to four are just a coincidence. The restaurant then lost another star with his death. In his career-killing review, he compared Chef Gusteau to the rather pathetic Chef Boyardee.

When
he had heard that Gusteau's
was rising in popularity with Remy
as the cook, he personally offers a challenge to the restaurant in which they
must deliver "their best shot" to impress him. Remy serves a simple
peasant dish, ratatouille (a play on words and the title namesake) which is so
brilliant it reduces Ego to his childhood memory of his mother cooking. Tears
flow from his eyes, and when he requests to see the chef, Linguini
and Colette tells
him to wait until after the customers have gone. When closing hour is struck,
Linguini reveals Remy. Ego believed at first it was a jest, but after viewing
Remy perfectly recreate the dish, he thanks them for the meal and quietly
leaves.
A changed man, he presents a shining review of the restaurant, and in particular, the chef (whom he does not name). Ego then lost his job and credibility when Gusteau's was closed down due to a rat infestation. But Ego now leads a successful and a happy life as an investor and regular patron of a small bistro, with queues around the block and where the cook is a small rat. Anton Ego is an example of a realistic villain, one who faces adverse action or reformation, rather than simply getting destroyed at the end.
The name Ego means "self-esteem", from the Roman meaning "I". This would allude to a certain level of vanity and arrogance on the part of Anton. He has nothing but contempt for the people around him combined with a cruel sense of humour and something of a sadistic streak. However, unlike Skinner, he is not presented as a man of pure evil. He shows a great amount of humility and indeed sentiment after eating Remy's dish of ratatouille and learning the secret of Gusteau's restaurant.
Ego is extremely passionate about food, claiming "I don't like food, I love it." and claims to refuse to swallow food that he doesn't like, which explains why he's so thin.
He is a man of great taste and distinction, showing a knowledge of fine wines as well as food.
Ego is intelligent and sophisticated and in terms of dress sense, he appears to be something of a dandy, completing his dark, dapper suit with a chic scarf.

He is a brown (probably like his mother's fur color), overweight rat, and is slightly larger than his younger brother. He is friendly, understanding, and is the only one who Remy tells about his cooking, TV watching, and reading talent. He never tells their dad Django, due to his brotherly support to Remy (although he did carelessly tell his friends about Remy's activities inside Gusteau's). Emile loves food, however, he often swallows food whole and, to Remy's disappointment, doesn't savor the flavors.

Horst: is the sous-chef after Skinner. Horst before he worked at Gusteau's restaurant, went to Prison but he won't explain why. He says that he defrauded a major corporation, robbed a bank using only a ballpoint pen, created an ozone hole over a city, and killed somebody with his thumb. He hired Alfredo Linguini as garbage boy with the other chefs, without Skinner's permission. Then he however joined everybody to try to kill Remy when Remy is caught. He next appeared when people asked "What is new!" He calls the meal "Special order" and then he joined cheers with Linguini when Liniguini took over Gusteau's restaurant. Then when Anton Ego a food critic reviews the restaurant Horst tried to kill Remy with everybody but Linguini tells them to spare Remy telling them about how Remy was the real cook behind the recipes. Horst was the first one to quit his job sadly.
Skinner (also known as "Chef Skinner") is the main antagonist in Ratatouille.
He is also head chef of the famous restaurant Gusteau's. He was sous-chef under Gusteau but became the head chef after Gusteau's death. In Gusteau's will, it was stated that Skinner would inherit Gusteau's business interests if no heir appeared within two years after the latter's death. Skinner evidently did not hold Gusteau's ideals in the highest regard, and was more interested in personal profit from his line of Chef Gusteau Frozen Foods. This line comprised of several different foreign foods like chicken, haggis, burritos, and corn dogs in order to appease overseas markets, with Gusteau as its image to woo buyers.
Skinner reluctantly hires Linguini to work at the restaurant as the plongeur (garbage boy) when he learns that Linguini's mother, Renata, with whom Gusteau was close, requested that Linguini get the job prior to her recent death. He is shocked when Linguini makes a soup that night that impresses a food critic that just happened to be at the restaurant, although it was Remy who cooked it in secret. Suspicious, Skinner forces Linguini to make it again.
After Linguini and Remy team up, they successfully recreate the soup and impress Skinner. However, they become rivals when Skinner learns that Linguini is Gusteau's biological son, and is determined to keep Linguini from discovering this fact. He becomes even more determined when he sees Linguini making contact with Remy on numerous occasions, suspecting that Linguini is scheming in the kitchen.
He loses the restaurant to Alfredo Linguini when it comes out that Linguini is the son of the dead chef. Remy discovered this fact and gave it to Linguini so that he may assume his rightful place as owner. Linguini later cancels the frozen food line altogether, as it was smearing Gusteau's image.
Skinner spies on Linguini and eventually discovers that Remy is the cook. He captures him and intends on forcing him to create a new frozen food line while leaving Linguini in danger of Anton Ego, who was at the restaurant. He attends the restaurant in disguise to see how badly Linguini fails.
To Skinner's amusement, Linguini served him and Ego a simple dish of ratatouille, but is surprised when Ego actually likes it. He races to the kitchen to find that Remy and his colony of rats cooked the dish, and is locked in the fridge. However, the rats had to let him loose and Skinner reports the rat infestation to the health department, causing the restaurant to be closed. Linguini starts a new restaurant later and Skinner finally leaves him alone.
Even though Skinner's appearance is that of an Italian, he has a French accent.
Skinner's behavior, diminutive size, and body language are loosely based on Louis de Funès.
Auguste Gusteau: He is the renowned and extremely talented chef who wrote the bestseller "Anyone Can Cook" and founded the restaurant Gusteau's which merited five stars. His personal motto is that anyone can cook, and is prone to producing recipes with unusual flairs. He was the youngest chef in history to obtain a 5-Star restaurant, and was among the finest chefs worldwide.
After Anton Ego gave his restaurant a bad review which took a star off the restaurant (for reasons unknown, as Ego was just one man compared to the masses who greatly admired Gusteau's cooking), Gusteau died of a "broken heart", resulting in another loss, bringing the restaurant to a 3, according to tradition. Gusteau's ownership of the restaurant was handed over to his sous chef Skinner, who was not exactly faithful to his boss's ideals. He later appears as Remy's guide, leading him to Gusteau's.
It is later revealed that Alfredo Linguini is really the son of Gusteau. He is the son of Renata Linguini, with whom Gusteau once shared a romantic relationship. Linguini later acquires the restaurant after Remy informs him of this discovery.
His first and last name are anagrams of each other - Auguste (gusteAu) and Gusteau (auGuste).
There was a point when the film makers decided to keep him alive. But Brad Bird said there were too many stories to tell so they decided Gusteau would be dead. However, he does still speak to Remy as his "conscience". When Remy asks how a man can communicate with a rat, Auguste admits that he is a figment of Remy's imagination and it is Remy's mind that is channeling him from the great beyond.

-
Ego is most likely a mixture of traits borrowed
from the late horror actor, Vincent Price and British art critic, Brian Sewell.
- Ego's appearance was modeled after Louis Jouvet.
- Many fans have noted the similarities between
Ego's design and that of the work of Tim Burton, a well known movie
director.
- Ego's appearance is similar to Nospheratu.
- At one point in the film, you can see Bomb Voyage as a mime in the background. There is a young
boy watching him do his tricks, and if you look closely, you can see that
it is young Anton Ego (From Ego's flashback).
- Anton's office is shaped as a coffin, setting the
mood of the character.

When Django hears that Remy has been cooking in the kitchen
with humans, he is against it and gives Remy warning that humans and rats will
never get along, showing his son an extermination shop with dead rats hanging
on a bar, but Remy refuses to believe this. Later, Remy is captured by Skinner, in which
Django and Emile help rescue him. Remy returns to the kitchen, where Linguini reveals the
secret of Remy cooking by controlling his movements under his hat to the staff.
Everyone is in disbelief and walks out of the kitchen leaving Linguini
helpless. Django finally see's his son's passion and determination to cook, and
that humans aren't that bad. As of this, he organizes the rest of the pack to
help out in the kitchen. They lock Skinner and the Health
Inspector into the storeroom when they try to interfere. Near the end,
Django is sitting at mini tables located on a hedge of a window behind plants
talking with other rats in his son's new restaurant, La
Ratatouille.

He is a brown (probably like his mother's fur color), overweight rat, and is slightly larger than his younger brother. Git: a rat in the film Ratatouille. He is very strong compared to the other rats, and is
easily the largest rat in his colony. He is a close friend of Emile, Remy's older brother. He helps Remy steal food near the end of the
movie. He becomes one of the rats at the end of the movie cooking to impress
the critic Anton Ego. He now hangs out at La Ratatouille, showing
baby rats his muscles.
